This recipe is near and dear to my heart. Whenever I’m feeling a little under the weather, nothing makes me feel better than my Mom’s homemade chicken soup. It’s the ultimate comfort food and a family favorite. You don’t have to be sick to enjoy it!Mom's Homemade Chicken Soup

MOM’S HOMEMADE CHICKEN SOUP (Serves 6-8)

INGREDIENTS
2 tablespoons olive oil
1 whole organic chicken – quartered
1 onion – chopped
4 garlic cloves – minced
1 cup organic low-sodium chicken broth
2 quarts cold water
2 tablespoons fresh dill – minced
1 corn on the cob (broken in half)
4-5 carrots – sliced
4 stalks celery – sliced
½ cup chopped parsley
garlic powder, Kosher salt and pepper to taste

DIRECTIONS
Heat oil in large, heavy pot. Cook onion and celery until translucent. Place chicken, skin-side down in pot to brown. Add carrots and corn on the cob, cover with water and broth. Bring to a simmer and cook for one hour. Remove chicken. Let cool. Shred meat from bones and discard skin. Return meat to pot and stir in parsley and dill. Simmer for another 20 minutes and soup is ready!
