Slow Cooker Lemon Garlic Chicken

Slow Cooker Lemon Garlic Chicken is a great dish to let cook (about 5-6 hours) while getting your holiday shopping done!


  • 2lbs skinless, boneless, chicken breasts – cut into 6 fillets
  • 10 garlic cloves – chopped
  • 3 lemons, sliced
  • 1-cup organic fat free chicken broth
  • 1 tbsp dried thyme
  • Sprigs of dill
  • Salt and Pepper to taste
  • 8 purple & white baby potatoes


  1. Spray bottom of slow cooker with non-fat cooking spray. Place half of the lemons and garlic in the bottom of the slow cooker.
  2. Season chicken with salt, pepper, thyme and place on top of lemons and garlic.
  3. Cover chicken with remaining lemon slices, baby potatoes, dill sprigs and garlic, pour chicken broth over everything.
  4. Cover and cook on low about 5-6 hours, or until chicken is cooked through.
  5. Liquid from slow cooker can be strained and served over chicken.
  6. Serve with side of steamed broccoli.
