Slow Cooker Lemon Garlic Chicken
November 16, 2013Slow Cooker Lemon Garlic Chicken is a great dish to let cook (about 5-6 hours) while getting your holiday shopping done!
Ingredients
- 2lbs skinless, boneless, chicken breasts – cut into 6 fillets
- 10 garlic cloves – chopped
- 3 lemons, sliced
- 1-cup organic fat free chicken broth
- 1 tbsp dried thyme
- Sprigs of dill
- Salt and Pepper to taste
- 8 purple & white baby potatoes
Instructions
- Spray bottom of slow cooker with non-fat cooking spray. Place half of the lemons and garlic in the bottom of the slow cooker.
- Season chicken with salt, pepper, thyme and place on top of lemons and garlic.
- Cover chicken with remaining lemon slices, baby potatoes, dill sprigs and garlic, pour chicken broth over everything.
- Cover and cook on low about 5-6 hours, or until chicken is cooked through.
- Liquid from slow cooker can be strained and served over chicken.
- Serve with side of steamed broccoli.
