Windsor Oaks 2008 Pinot Noir 4 Dijon Clone Blend $35

This vintage Pinot Noir is medium-bodied with bright acidity and full of red fruit, vanilla and baking spices.  These qualities give the wine incredible flexibility with the different ingredients in the recipe.  The Pinot Noir is big enough to handle the richness of the egg; cream and cheese base and will equally compliment the salty-sweet flavor of Kalamata olives and enhance the rosemary.
